Curried Two Potato Soup




		
	Ingredients:

		1 tablespoon of olive oil
		2 teaspoons green curry powder
		2 leeks, sliced
		1 onion, cut and diced
		4 potatoes, chopped
		3 sweet potatoes, chopped	
		2 chicken ‘Ultra-cubes’
		2 1/2 litres of water
		1 cup of cream
		Onion salt and black pepper
	
   	Method:

		Heat oil in a large pot.
		Add curry powder, leek and onions.
		Cook until onion and leek is soft.
 		Add potatoes, stock cubes and water.
		Cook for about 20 minutes or until potatoes are soft.
		Place contents of pot in a Blender until mixture is smooth
		Add cream and salt and pepper.


		Serves 6.
